Enjoy Life Foods never stops baking up fun. Just in time for Halloween, they have released a favorite recipe from their cookbook, Cookies for Everyone! and come up with a new cookie recipe from their test kitchen that uses their newly named Enjoy Life cereal. Formerly Perky's Nutty cereal, the new Enjoy Life Crunchy cereals will have the same great, crispy taste, but without the nutty name. Fitting, since they are nut-free cereals!

Coco-Loco Bites They've taken a favorite from the pages of their cookbook, Cookies for Everyone!, and added a few tweaks to make "spook"-tacular bites for your favorite ghouls and boys. Ingredients:
- 1/2 cup of unsweetened applesauce
- 1/3 cup of water
- 1/3 cup of vegetable oil
- 1 Tablespoon of vanilla extract
- 3/4 cup of unsweetened cocoa powder
- 1 cup of superfine sugar
- 1 1/3 cups of white rice flour (such as Bob's Red Mill)
- 1/4 teaspoon of salt
- 1 teaspoon of baking powder
- 1 1/2 cups of semi-sweet chocolate chips (use Enjoy Life brand for dairy-free, soy-free and food allergy-friendly!)
Directions: 1) Preheat oven to 350 degrees Fahrenheit (180 degrees Celsius or gas mark 4). 2) With a mixer; beat applesauce, water, oil, vanilla, cocoa and sugar until smooth. Add flour, salt and baking powder and mix until well combined. Stir in chocolate chips. 3) Spoon batter onto a lightly greased 11x17x1-inch jelly roll pan. 4) Bake for 7 minutes, rotate the pan and bake for an additional 9 minutes. Let cool completely, then cut with Halloween cookie cutters. 5) Sprinkle granulated sugar and anything else, including powdered sugar, safe candies or candy pieces, to make the treat your own. Yield: 2 dozen; depending upon cookie cutter size Crispy, Creepy Critters A new recipe fresh from the Enjoy Life test kitchen! Ingredients: Directions: 1) Combine first five ingredients in a large pan and bring to a boil. Reduce heat to a simmer and cook one additional minute stirring constantly. 2) Remove from heat and add sunflower butter and vanilla. Beat with a spoon until blended. Add chocolate chips and Nutty Rice (or Flax) quickly, and stir until coated (chocolate chips will melt). 3) Lightly grease two 11x7x1 jelly roll pans. Firmly press the mixture into the pans and cool. Cut shapes with Halloween cookie cutters and remove carefully. Decorate as desired for a deliciously fun Halloween treat! Yield: 2 trays; depending upon cookie cutter size Note: Use cutters with simple shapes and if the critters crumble upon removal, just press them back into shape. |
