Sweet Sundays: Worldwide Vegan Bake Sale and "Can't Miss" Chocolate Chip Cookie Recipe PDF Print E-mail

"Can't Miss" Vegan Chocolate Chip Cookie RecipeThe second annual Worldwide Vegan Bake Sale has been offiicially announced, and you are invited to participate. From April 24 through May 2. 2010 (two weekends and the weekdays in between), groups from across the world will hold vegan bake sales. Each participating group gets to choose its venue, what to sell, and how it uses the proceeds. Anyone interested in holding a bake sale can do so on any day during the period—or on more than one day.

In 2009, the first year of the event, a hundred groups participated and raised over $25,000 for a variety of causes, earning the The Worldwide Vegan Bake Sale the title of "Veg Event of the Year" by VegNews Magazine. Nearly every 2009 participant has vowed, with enthusiasm, to return in 2010.

In honor of the event launch, the founders offered to share with us their go-to bake sale recipe. Dubbed "Can't Miss" chocolate chip cookies, these little morsels are a vegan and dairy-free spin on the classic Tollhouse variety ...

"Can't Miss" Chocolate Chip Cookies 

Recipe created by Holly, for successfull Vegan Bake Sale around the globe. These little morsels sell out every time!

  • 1-1/2 cups margarine (non-dairy varieties include Earth Balance Natural Buttery Sticks, Willow Run, and Fleischmann’s Light)
  • 1 cup sugar
  • 1 cup brown sugar
  • 1/4 cup tofu (firm or soft)
  • 1-1/2 teaspoons vanilla extract
  • 3-1/4 cups flour
  • 1-1/2 teaspoons baking soda
  • 1-1/2 teaspoons salt
  • 1-1/2 teaspoons water
  • 1 cup chopped walnuts (optional)
  • 3 cups non-dairy / vegan chocolate chips

In food processor (or by hand), blend margarine, sugars, tofu, and vanilla. 

In separate bowl, combine flour, baking soda, salt, and water.  Stir wet ingredients into dry ingredients. Batter should be somewhat sticky, not dry—add a little more water if necessary.

Add nuts and chips. 

Using heaping tablespoons, spoon onto greased cookie sheet and bake at 375 for about 9 minutes, till just turning golden brown.

Let cool on cookie sheet for a couple of minutes, then use spatula to put on large plates to finish cooling.

Yields 3 dozen large cookies
