Gluten-Free Casein-Free French ToastLast week I featured Amy's rave of Pamela's Simplebites Mini Cookies, but her passion for Pamela's Products didn't end there.  She promptly sent me a lengthy, and equally enthusiastic review, of their Amazing Wheat-Free Bread Mix.  She used the mix to make tea sandwiches for her daughter at a birthday party, but not to be left out, she cooked up a few slices of French Toast for herself.  Below is Amy's "secret" recipe (not so secret anymore!) for her favorite French Toast.  Of course, you can use your favorite bread, whether wheat-based, wheat-free, or gluten-free to create this delicious breakfast treat ...

Amy's Secret French Toast Recipe - not vegan, but gluten and casein free.

  • 2 slices of gluten free bread (the thicker the slice the better)
  • 2 egg whites
  • 1 full egg
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon vanilla
  • 2 tablespoons vanilla rice milk

Mix together ingredients while griddle pan is heating up (use a touch of margarine on the pan to prevent sticking..)

Dip bread in the batter and place on the griddle pan, cook on a medium heat for a couple of minutes each side. Once each side is slightly brown- its done! Smother in margarine and syrup and enjoy!
