Frugal Foodie Friday: Snickerdoodle Blondies |

For our holiday party, I finally made a dessert that I had been wanting to trial for years, blondies. But not just any blondies, Snickerdoodle Blondies. The rich cookie-bars turned out perfectly sweet and a bit decadent, while still maintaining their casual cookie vibe. They were quite literally devoured by one and all. Fortunately, I planned ahead and stashed a supply to be enjoyed with tea later; my personal "reward" for a successful and dairy-free gathering.
I watched as our guests attempted to guess what this wonderful dessert was. One came awfully close when he said it tasted like snickerdoodles crossed with gingerbread. But, I can assure you (and to my husband’s delight), that there isn’t a speck of ginger in this recipe. The recipe as I made it is dairy-free, nut-free, soy-free, and vegetarian.
