Banana BreadA fabulous banana sale hit my local grocer this week, "forcing" me to load up with close to a dozen bunches.  After a morning of slicing, flash-freezing, and packaging the bananas for later use, I stopped short, leaving out a bunch or two for some baking endeavors.  After all, with so many inexpensive bananas, who could can resist the temptation of banana bread? ...

Taking a chance, I decided to attempt veganizing my favorite banana bread recipe.  While it was already dairy-free, eggs and honey were still key components.  Amazingly, I succeeded!  Yet, my hearty Banana Whole Wheat Bread did transform into a slightly more indulgent Banana Coconut Loaf (recipe on One Frugal Foodie) ...
