When I asked my colleague Amy if she would like to sample some cookies from Pamela's Products, I never expected that she would fall so hard for their Simplebites line.  Gluten-free, casein-free, and made with all-natural ingredients isn't usually the cookie profile that elicits comments such as, "Chips Ahoy- beware! There is a mini version of you that is up and coming ... and it will take over the cookie world!!!!" and "WOW! Those were some awesome cookies."  But it is true, Pamela's didn't just meet expectations, they far exceeded them with their Extreme Chocolate, Chocolate Chip, and Ginger Snap Mini Cookies.  Not to mention, these perfectly portable sweets can be easily tucked into lunchboxes for a special treat ... just in time for the new school year.
