Flourless Chocolate TorteAlisa Fleming, www.GoDairyFree.org ~ As Passover quickly approaches the net is abuzz with kosher recipes, both innovative and traditional.  Yet none have been able to catch my eye as much as the ones from Levana Kirschenbaum.  Levana is the author of several cookbooks, including Levana Cooks Dairy-Free and Levana's Table: Kosher Cooking for Everyone, and she is a well-known chef in the NYC area, offering very popular cooking classes.  While I was inspired by Levana’s Sweet Potato Kugel recipe (sent out in her regular newsletter), I have latched onto a luscious recipe featured in one of her recent classes.  The class theme was “A Seder Feast,” and my recipe of choice (among the six incredible dishes) is the Chocolate Pecan Torte with Chocolate Glaze, which just happens to be gluten-free and dairy-free too! Scrambled Tofu from OprahAlisa Fleming, www.GoDairyFree.org ~ Last week I set out on a mission to find the perfect scrambled tofu recipe, one worthy of stuffing in a delicious breakfast burrito (like the one I had tried from Amy's), but all seemed to call for an ingredient or two that I didn't have on hand or just didn't sound appealing.  Just when I had given up the search, Meatout Mondays emailed their recipe of the week ... Scrambled Tofu!  The recipe looked just right ... easy, using everyday pantry ingredients, an enticing flavor combination, and it was from .... Oprah?  Who knew that Oprah would be the best source for a dairy-free and vegan recipe?  Thanks to our good friends at Meatout Mondays for unearthing this fabulous recipe, which was presented on Oprah by Dr. Andrew Weil several years ago in a show featuring Recipes for Your Heart ...

Pancakes for OneHannah Kaminsky, My Sweet Vegan & Bittersweet - Left to my own devices, solo meals are hardly even noteworthy. Hummus and chips, or hummus and veggies show up on my personal menu almost very single day, an easy favorite by far. Couscous or rice served up with simple combinations of veg, beans, and spices always makes for a comforting dish, and it can practically cook itself, unattended. In times of stress and exhaustion though, it’s not such an uncommon event to eat cold cereal for dinner, or even just chips, hold the hummus. Satisfying in its own right but at the same time vaguely shameful, I almost never go through any great lengths preparing food if it’s only for myself ...

Dairy Free Chicken with Mushroom Cream SauceCarol Kicinski, Simply... Gluten Free ~ Many people who can’t tolerate gluten can’t tolerate dairy either. Like my famous sister the author of steamy chick-lit historical romance novels.  While I can tolerate dairy (thank God, I have enough problems as it is!) I wanted to experiment with some dairy free recipes so that I could properly entertain others who aren’t so lucky. There is nothing worse for your reputation than putting someone into an anaphylactic shock as a result of your wonderful home cooking! I came up with this recipe for my sister whose creative efforts run more to the written word than the culinary. This dish is super easy and it took less than 15 minutes to prepare. It has a nice gourmet feel to it and most importantly contains nothing to cause an allergic reaction for her.
