Vegan Double the Cinnamon RollsSo, what do you do on a Friday night? Well, I bake Cinnamon Buns … half way. You see, all of those recipes that require you to make cinnamon buns from scratch in the morning seem ridiculous. I am hungry in the morning! I don’t want to wait for dough prep and two whole rising times before I can sink my teeth into those babies. No, a little forethought is in order, whether for a voracious appetite or a special occasion (such as a busy Easter brunch).

As it happened, I was out of eggs. So these Cinnamon Rolls are also vegan (dairy-free, egg-free, and optionally soy-free), but don’t let that fool you, they are incredibly tender and delicious. You won’t know the difference between these and those fluffy store-bought cinnamon rolls. In fact, my husband swore that these were much better. As verified by the quantity he ate before I could even take a picture!

Kids Can CookEvery Tuesday we will feature a review from our Dairy-Free Library. This week’s selection is Kids Can Cook: Vegetarian Recipes by Dorothy R. Bates (reviewed by Sarah Hatfield of No Whey Mama) - We're very happy with this cookbook and have been using it frequently since it arrived last week. This is a vegetarian/vegan cookbook with lots of old favorites in it: Cocoa Pudding Cake, Magic Coconut Pie, Blueberry Muffins, Monkey Pull Apart Bread, Vegetable Soup, etc. There are also some easy vegan recipes like Tofu Pot Pie and Melty Cheeze Sauce. I admit, it is a new concept for me also, but when the wonderful people at Laughing Giraffe Organics emailed this recipe straight from the Giraffe's mouth (and graciously granted a reprint here) who was I to argue?! Especially since they churn out some of the most delicious granola and macaroons (lovingly named Snackaroons) I have ever sunk my teeth into. This week’s selection is reFresh: Contemporary Vegan Recipes From the Award Winning Fresh Restaurants by Ruth Tal with Jennifer Houston (reviewed by jae steele, author of Get It Ripe) - I'll admit - the first time I thumbed through this book (on a visit to Ruth's popular Toronto veg chain restaurant, Fresh) I was a little peeved. What gives? I thought. There are so many repeat recipes (from Ruth's first two cookbooks). Do I really need this one for just a few new recipes? It wasn't until I read the preface at a later date that I learned that this book is actually a polished-up do-over of Ruth's first, and far more modest two-colour cookbook that came out in 2000 under the title JuiceForLife (which is also the former name of her resto) ...

Wheat-Free Apple Cinnamon Dutch BabiesWhen I first discovered the recipe index on the blog Say Yes to Salad, I was in healthy foodie heaven. Filled with simple recipes using whole food ingredients, it was like my own personal menu planner. Since I had a couple dozen eggs on hand (I just can't pass up a deal), I decided to dive right into her simple Dutch Babies recipe. I loved how few ingredients it used and how quickly it could come together. However, I wanted something to fulfill as a well-rounded breakfast, so I made a few tweeks ... incorporating oats, apples, and cinnamon for a wholesome meal. I also did some research on optimizing the results of Dutch babies, and added these tips within my recipe for Wheat-Free Apple Cinnamon Dutch Babies. They must have worked, as this breakfast treat turned out perfectly.
