ChardThe fact that millions and millions of adults and children are not eating enough vegetables is not exactly new news.  Yet, one mother is not about to sit back and watch her children become a part of this malnutrition statistic.  Charlotte, a mother of two in London, is daring her children (and the entire blogging community) to The Great Big Vegetable Challenge.

Charlotte isn’t just presenting the challenge though, she is actually using the alphabet as inspiration to introduce new foods and recipes to her children, and sharing it on her blog.  Her idea came from the popular children’s book by Lois Ehlert, Eating The Alphabet: Fruits and Vegetables from A to Z. 

With each letter of the alphabet she posts fruits and vegetables that start with the same letter and multiple recipes for giving them a shot!  Though the many (many) recipes she posts up are not all dairy-free and vegan, some are.  Plus, most of those which aren’t, seemed very easy to convert, requiring only that you use a milk alternative in place of the milk (soy, almond, rice, etc.) and a butter alternative in place of the butter (such as Earth Balance).
