Those crazy coconuts! To make your own, toast grated coconut over low heat in a frying pan until lightly browned, then whirl it (while still hot) in a blender until it has the consistency of a smooth paste. Although straight coconut butter isn’t great for spreading, it can work well in cooking and baking. While there are a few manufacturers who tought their products specifically as coconut butter, many consider coconut oil and coconut butter to be interchangeable. Coconut oil is solid at room temperature, but it can melt readily in a warmer room.
