Healthy Cooking Simplified with Recipes from The 4 Ingredient Vegan
Thursday, 05 August 2010

The 4 Ingredient Vegan CookbookWith vegan cookbooks literally flooding the market, it is essential to etch out a niche, and Maribeth has done just that with a focus on quick, easy, convenience, and shortcuts in her new cookbook, The 4 Ingredient Vegan. With the exception of water, salt, pepper, and oil or margarine (the “freebie” ingredients), every recipe in this cookbook contains just 4 ingredients. That includes herbs and spices, which I do appreciate. Though many argue that “the ingredient list may be long, but it is mostly just herbs and spices” you still have to take the time to get out and measure those spices and chop those herbs! I think it is great that the author counts these in her 4 ingredient limit.

What I love most about The 4 Ingredient Vegan – simplicity. Sometimes recipes drown themselves with too many ingredients and flavors, not to mention eating up my time in preparation!  Plus, this is a compilation of great baseline recipes for building your own creations upon. I’ve already started experimenting with the first two recipes I trialed …

Summer Reading Series Giveaways: Win this Family-Friendly, Food Allergy Cookbook
Wednesday, 04 August 2010

Sophie Safe CookingOne Autographed Cookbook, Two Winners. I mean, one book for each of you of course, the winners don't need to share!

This week's giveaway is Sophie-Safe Cooking by my fellow author friend, Emily Hendrix. This is a fun cookbook with very easy, kid-friendly recipes. And when I say kid-friendly, I mean it ... the portions sizes are even little-finger friendly. I must admit, I felt a lot less guilty downing three of the scrumptious pumpkin muffins I made from this book since they were half-pint in size. Of course, you can always double the serving sizes for heartier palates.

The entire book is free of the top eight allergens - milk, wheat (oats are used), eggs, soy, nuts, peanuts, fish, and shellfish. In other words, the recipes are family favorites that Emily made "Safe" for her food allergic daughter Sophie. It is a great, comfort food collection. Okay, lets roll ...

Findings Linking Calcium Supplements to Heart Attack Risk Need Further Research
Tuesday, 03 August 2010

CalciumLast week, a study blanketed the internet with headlines like “Calcium Supplements Linked to Heart Attacks” (LA Times). The funny thing is, the findings really aren’t new, and they are still somewhat inconclusive.

Dr. Ian Reid of the University of Auckland in New Zealand and his colleagues combined results from 11 randomized controlled trials of calcium supplements. In other words, this was a composite analysis of prior studies that involved a total of roughly 12,000 patients – post-menopausal women specifically.

The most recent study they analyzed was done in January, 2008, and it was also led by Dr. Reid. In that study they followed 1,471 healthy postmenopausal women, ages 55 and above, assigning half to get a daily calcium supplement of 1,000 milligrams and half to placebo pills. The average age in both groups was 74.

Ask Alisa: Can you recommend packable dairy-free snacks and breakfast items for traveling?
Monday, 02 August 2010

Snack NutsQ: Julea - I am lucky enough to be going to Walt Disney World for 9 days, and thought that I would ship a small package of non-perishable food to our hotel for snacks and breakfasts that are dairy-free.  In addition to avoiding dairy, I am also sensitive to soy protein.  I wondered if you have any suggestions for things that would be good to include.  (see part 2 of Julea’s question on the parks next week!)

A: Alisa - As for packable items, some of my own personal suggestions are:

Oats, instant oatmeal, or other packet-type hot cereal. These are easy to make assuming your room has a coffee maker (to boil water) or microwave.

Dried fruit and nuts. These are not only great for snacking out of hand, but also for adding to your oatmeal or hot cereal for a more substantial breakfast.

Enjoy this Guilt-Free Vegan Cookies ‘n Creme Milkshake Recipe
Sunday, 01 August 2010

Cookies 'n Cream MilkshakeSweet Sundays: This week we have another delicious guest post from Hannah, author of My Sweet Vegan, and blogger at Bittersweet. For more of her cool summer treats, enjoy her ebook, A La Mode.

Call it a mere craving, but such a word feels insufficient to describe the intense desire- No, urgent need- for a milkshake at times like these. Cookies and creme, arguably one of my favorite ice cream flavors, was the only thing that would really fit the bill. You see, I was always that weird kid who loved making creamy powdered drink mixes because they never fully blended in and left lumps floating on top- Using a spoon, I ate my powdery shakes like a bowl of dessert cereal. Those bits and pieces add so much more than just sweetness and flavor to an otherwise smooth treat like this. It’s that texture that makes this creamy offering so irresistible, so crave-worthy, and so memorable. Finding cookies and creme shakes as a teen was a godsend, filling that need for a milkshake with a bit of crunch and chew without looking like a completely freak.

My version uses a homemade sheet of cookies, broken up into tiny pieces to fulfill that cookie-riddled effect. Best of all, no ice cream is needed for the shake, and thanks to the addition of chia seeds, it’s far and away healthier than the original inspiration. Just try to plan ahead and bake the cookies when it’s cooler- You’ll thank yourself when the craving strikes ...
