Diagnosing Lactose Intolerance with a Kahlua and Cream PDF Print E-mail

Michelle - I was thrilled to find your website!  I have been living with lactose intolerance for almost 20 yrs.  My stepmom diagnosed it after a card game with homemade kahlua and cream.  I had had stomach problems for years and never knew what was going on - after one drink, and one hand, I was immediately sick.  Spare you the details :)  Long story short, I eliminated so called normal dairy products and began to feel better.  Yep, she was right ...

And over the years, people in the general population have begun to realize that it's NOT "in my head" and yes, I really do get sick if I drink regular milk or have some real butter in a restaurant.  Fiance included - he has been a witness and now he believes me.  He even reminds me sometimes about butter on buns and in soups in so called restaurants.  He is wonderful.  

I have been cooking with Galaxy cheese products (cheers to you!!) and also cooking with Silk milk for probably 3 years - more heavily now.  And it's been going well; he actually likes my stuff.  He won't drink the milk alone so we have a gallon of 2% and mine, but it's cool if I cook with my milk.  It's ;nice to eat the same meals!! 

We have recently moved to CO and their resident soy milk is "Great Value" marketed by WalMart  - third party  certified.  What the heck does that mean?  Anyway, it is almost as good as Silk but more inexpensive.  I buy 2 pkgs of cheddar, 2 pkgs of mozz, 2 containers of milk, and 1 pkg of sliced cheese every week [all dairy-free] - is there a way to get more variety??  Cream cheese, mozz stix, sour cream??  Galaxy makes thse products but I can't find them in WalMart.  Whatever, I am still glad to find your site and have some options.  THANKS!!!
