Authentic Foods Multi-Blend Gluten-Free Flour Mix (Vegan, Gluten-Free, Soy-Free) PDF Print E-mail

Going gluten-free can be tricky, especially if you love baking.  For the best results it you need just the right blend of three or four gluten-free flours. Deciding those proportions let alone picking a few that go together from the surprisingly large selection of gf flours can really seem daunting.  For this reason, I highly recommend gluten-free flour blends.  Each that I have trialed has worked beautifully, and this flour mix was no exception.

Taking the guesswork out of the equation, Authentic Foods Multi-Blend substitutes for regular (wheat-based) flour measure for measure in all of your recipes, from fried chicken to quick bread.  The only extra you may want on hand is xanthan gum.  Just a tiny bit of xanthan gum provides extra binding when necessary.  When using this flour mix, there is no need for additional xanthan gum when making pancakes, waffles, pie crust, or cookies. For cake and quick bread recipes, ½ teaspoon of xanthan gum per cup of flour mix will work perfectly.

Being the cookie monster that I am, I went for traditional chocolate chip cookies when trialing this mix.  Truthfully, I loaded the cookies up with so many chocolate chips that it was hard for me to taste-test the cookie part alone. Nonetheless, the cookies were very cohesive, just like a regular wheat-based cookie.  I did notice a slightly different texture, likely from the brown rice flour, along with a hint of uniqueness in flavor, but nothing overpowering.  Overall, I loved the convenience, and my family and I loved the cookies.  No complaints!
