One never knows what to expect when venturing gluten-free foods. Luckily, creating a gluten-free pancake is not as challenging as it may seem. Their flat nature and blend of ingredients ensures a tighter bind than your average gluten-free bread. Nonetheless, the results can vary greatly. I should know, I have tested more than my share of pancake mix brands. Some were surprisingly light and fluffy, some flat and thin, but none quite like those from Authentic Food's Pancake Mix. Thick and cake-like, these pancakes were tall, but not fluffy. They retained a density I might expect in heartier muffins. My husband LOVED them. He could have easily inhaled the entire batch himself, but was kind enough to save a few for me. Each pancake was so thick that I was able to slather one with a Tablespoon of peanut butter and eat it like a thin slice of bread. They worked equally well as a sweet breakfast treat topped with pure maple syrup. However, for these morning cakes, my favorite dressing was simply a pat of Smart Balance margarine. 
When prepared as directed these pancakes have a mild sweetness all their own. I used vanilla hemp milk in the preparation, so the already vanilla spiked mix was taken up another notch. I would likely go for plain milk alternative on the next batch, though my husband certainly didn't complain of vanilla overload. In addition to the standard wet ingredients, the mix called for 2 Tablespoons of sugar. While mixes that do not include all of the dry ingredients are a huge pet peeve of mine, this does make for a more versatile baking mix overall. In fact, Authentic Foods has a good selection of recipes using this mix on their website, including one for doughnut holes! My Extra Notes & Tips: - The pancakes sizzled perfectly in my frying pan, but due to the height, they were a touch hard to flip perfectly, some dough always ended up smashing to the sides. This of course took away from the presentation factor, but not the taste.
- I used coconut oil for the oil in these pancakes. It seemed to enhance the flavor. If you opt to use coconut oil, be sure to bring the eggs to room temperature to keep the coconut oil from solidifying. Vegetable or olive oil should work equally well.
- This mix does call for eggs, and I am not certain if an egg replacer would work well, though it might for pancakes specifically.
