Cherrybrook Kitchen Chocolate Cake Mix (Vegan, Nut-Free) PDF Print E-mail

For those with severe food allergies, packaged cake mixes are frequently off limits.  The founder of Cherrybrook Kitchen, Patsy Rosenberg, started whipping up mixes to address this issue.  Completely free of dairy, peanuts, tree nuts, and eggs this cake mix is a savior for children’s birthday parties everywhere, particularly with the sharp rise in food allergies over the past decade.  As an afterthought, the Chocolate Cake Mix happens to be vegan.  To confess, I am the newest fan of vegan baking.  I converted to dairy free many years ago without ever looking back, but the discovery of vegan preparation has added a whole new element of simplicity.  This cake was a snap to prepare, just add oil and water.  It cooked quickly, in just over 20 minutes, and as with all other vegan baked goods we have trialed, it seemed close to goof-proof.  Difficult to over-bake, yet slightly undercooking was not a concern, since there are no eggs in the mix.  The texture was perfect.  It was just a touch on the dense and hearty side when compared to the fluffy chemical contenders, but not a bit crumbly.  The chocolate flavor was mild, likely very good for most kids, but spiked with miniature chocolate chips that added little flavor bursts throughout.  Although the instructions say the mix will make one 9-inch round cake pan, I think you could get another cupcake or two on top of this.  We came out with a very tall single layer cake.  If you go for cupcakes, a dozen or so may be likely.  Be careful though.  It is more indulgent than one might expect, little servings will be mighty satisfying.

  • Pros:  Free of nuts, dairy, and eggs (consequently vegan); Good texture and mild flavor; Kosher certified; Very easy to prepare
  • Cons: A touch pricey; High in sugar, but it is cake after all

THis is by far one of the best cake mixes ever. I bake it in tiny muffin molds and make mini cupcakes with a bit of white frosting and sprinkles. THe whole cherrybrook kitchen line is great tasting. The yellow cake is bit on the sweet side...but besides that truly great tasting.

chocolate cake!!!
I agree! This definitely takes the cake for non-dairy cake mixes. It is amazing! At around $5 a box for about 14 cupcakes, it is a tad pricey, but SO worth it!
