Gluten-Free Essentials Cocoa Mudslide Cookie Mix (Vegan, Gluten-Free, Nut-Free) PDF Print E-mail

These cookies are a true chocoholics delight!  A dense, almost brownie-like flavor is enhanced with the addition of … get this … marshmallows.  Certainly a kid friendly addition, plus they contribute a sweet flavor and chewy texture to give these chocolate cookies their own identity.

Cocoa Mudslide Cookies

Per Gluten-Free Essentials standard, these cookies are a snap to make.  Just add melted butter (Earth Balance Buttery Sticks in my case) and two eggs (or egg alternative), mix it all up, and refrigerate for at least 30 minutes.  Usually I would use the time to clean up the kitchen and perhaps get started on the review.  Unfortunately, I was once again dealing with an impatient cookie monster, my husband.  After some non-stop pestering, I put a small test batch in right at the 30-minute mark.  From the look of the cookies, it was obvious that I jumped the gun.  But…now that the cookie monster had been appeased, I could let the dough chill in the refrigerator overnight, just to be on the safe side.

After an overnighter, the dough was quite firm and easy to shape.  I popped six chocolaty rounds in the oven, and twelve minutes later pulled six beautiful cookies from the oven.  From their look, I had a hunch where the “mudslide” name originated.  Interestingly enough, the marshmallows melt in during the baking process, and occasionally one escapes just a touch creating what looks like a mini-mudslide.  Quite funny really. 

There was one other pleasant surprise; a few chocolate chips were dotted throughout for that double chocolate overload experience.  Even though I am nowhere near a chocolate addict, I could have dealt with a few more chocolate chip surprises in this cookie mix.  I think that would be my only upgrade request. 

In terms of the texture, I completely forgot these were gluten-free…honestly.  Soft and chewy would be the only way I would describe these delicious morsels.  Not even the slightest gluten-free hint could be detected in the taste or texture.  So bake-up and enjoy, worry free!

Notes & Tips:

  • Though overnight is not required, don’t skimp on the refrigeration.  I recommend an hour at least for the best results.
  • GF Essentials uses organic rice flour and non-GMO sorghum flour.
  • This mix is noted as nut-free (call to verify on cross-contamination), egg-free, and aside from the soy lecithin in the chocolate chips, this mix is soy-free.
  • The people at GF Essentials have trialed various egg alternatives for those who would like an egg-free and/or vegan cookie.  They recommend any of the following:
  1. Ener-g egg replacer
  2. ¼ teaspoon of Guar Gum, 2 Teaspoon of Tapioca Starch and ½ teaspoon of oil.
  3. 1½ tablespoon of oil- flaxseed or cooking oil and 1 teaspoon of Baking Powder.
  4. 1 teaspoon flax meal plus, ¼ cup water = 1 egg.
