At two hours on the dot, my sugar-addicted husband asked if the cookies were ready to bake yet.  The dough was still quite soft, so I decided to loosely shape a dozen circular cookies out and bake them (rather than rolling and cutting a stiff dough).  To my pleasant surprise, they baked perfectly and lightly browned just around the edges (so I could see) when they were done.  I love a visual indicator.  Unlike so many gluten free products, these sugar cookies were not crumbly at all and had no funny texture.  These are REAL cookies.  When I asked my husband if he liked the cookies, he simply responded, "I'll take another".  I took that as a yes, and happily brought him another, and another, and… well you get the picture.  

These sugar cookies turned out light, soft, fluffy, and pleasantly sweet.  Does this sound too good to be true for an allergen-free cookie?  Well there’s more.  Believe it or not, they even looked perfect, like evenly shaped little domes you would find in a bakery.  Not my typical cookie results.  Keep in mind, I used eggs in preparation, which may be a problem for some.  The initial directions call for the use of whole milk and eggs, but there are specific instructions on how to substitute for both.  Obviously, I utilized the alternative milk directions without a problem.  

The dough never did stiffen enough to be rolled, but the instructions specifically stated to use shortening, and I only had the Earth Balance Buttery Sticks available.  For “drop” sugar cookies with the flavor enhancement from butter, I recommend this.  For dough that can be rolled and cut into shapes, definitely use Earth Balance or Spectrum Shortening, coconut butter, or other comparable product.  

As is, they were excellent with tea.  For a special treat, I frosted several with some Cherrybrook Chocolate Frosting (also allergen free).  Once baked, they were easy to frost, regardless of the shortening or “butter” used.  Though it isn’t the least expensive sugar cookie mix on the market, it is the only truly allergen free one we have seen.  Not to mention, the cookies taste delicious, and the mix makes an amazingly large batch.  Our kitchen looked like a production line as we baked up nearly four-dozen cookies.

  • Pros:  Truly allergen-free - Manufactured in a facility free of wheat, gluten, dairy, peanuts, tree nuts, eggs, and soy (except for soy-lecithin within chocolate chips); Preparation tips for allergen free alternatives; Very easy to prepare; Good flavor and texture, particularly for a gluten free cookie; Relatively low in sugar
  • Cons:  For roll and cut cookies a very solid shortening must be used (but we liked them “soft” equally as well)
