Sarah Hatfield, No Whey Mama - I should tell you that our family has sampled Namaste’s cake mixes before, and we love them.  So I was all too happy to accept this reviewing assignment.  It’s a tough job….

All three of the cake mixes are free of gluten, wheat, soy, nuts, potato, corn, dairy, and casein. 

Namaste Vanilla Cake Mix

Our family decided to make the banana cake variation described on the Namaste website and make the cake into cupcakes.  We added three mashed bananas along with the eggs and oil, and we used soy milk instead of water.  The cupcakes turned out wonderfully – very moist and dense, almost more of a banana muffin than a cupcake.  I am not a fan of light, crumbly, boxed cake mix cakes, so I especially liked the texture and consistency of these cupcakes.

Namaste Foods Cake Mixes

Mix ingredients: Evaporated cane juice, sweet brown rice flour, tapioca flour, arrowroot flour, rice milk powder, baking soda, cream of tartar, salt, ground vanilla bean, and xanthan gum.

Namaste Chocolate Cake Mix

Once again, we made cupcakes instead of cake – mini cupcakes this time.  I frosted them with peanut butter frosting and we took them to a fall party.  (No one at the party had peanut allergies.)  Everyone remarked on how rich and chocolatey the cupcakes were.  They were a big hit.  We did have some leftovers, and they stayed moist for the next few days until we finished them off.

Namaste Spice Cake Mix

My dad will be the first person to tell you that he is not a cake person, and he loves Namaste Spice Cake.  My mom made it for his birthday and topped it with a dairy-free caramel icing.  We all agreed it reminded us of sticky toffee pudding.  Since we had tried the spice cake mix plain before, I decided to try the carrot cake variation printed on the package.  I added one cup of shredded carrots and some walnuts but no currants or raisins.  It made a great carrot cake, but the next day I noticed that the carrots had become discolored.  The cake still tasted fine, but it looked more like zucchini cake instead of carrot cake.  I didn’t have another package to retest the results, so it might have been my faulty carrots.  I don’t know.

Mix ingredients: Evaporated cane juice, sweet brown rice flour, brown sugar, tapioca flour, arrowroot flour, rice milk powder, baking soda, cream of tartar, salt, xanthan gum, cinnamon, nutmeg, and cloves.

Editor's Notes:

  • This may be a more difficult one to fully veganize, as the 13 x 9 inch pan called for 3 eggs.  Nonetheless, I believe these have been successfully trialed sans eggs.  See the Namaste FAQ’s for egg-free tips.
  • All of Namaste’s baking mixes and pasta mixes are excellent for those with food allergies intolerances, or Celiac Disease.  They are made in a dedicated facility, free of gluten, wheat, tree nuts, peanuts, dairy, corn, soy, and potato.  Trust me, they are meant for sharing; even “glutenous” critics will rave.

We, too, have had good results with the one Namaste cake mix we purchased. I have been making a dairy free, egg free chocolate cake from scratch for birthdays for the last several years, and everyone loves it. It's moist and delicious, but all who had the Namaste chocolate cake said it was better than my old standby! :)

I was so excited to try the Namaste Chocolate Cake after reading other reviews and was hugely disappointed. I followed the directions, mixing well, and the cake took longer to bake than the instructions indicated. The cake has a gritty texture and sort of a stale aftertaste. It definitely lacks rich chocolate flavor. ** A suggestion for anyone looking for an excellent gluten free chocolate cake... Pamela's Products is one to rave about, no one else would know it's gluten free.
