For a gluten-free, allergen-free pancake mix, Namaste takes the cake, or should I say the pancake?   Realistically, if I hadn’t known these were gluten-free, I wouldn’t have guessed.  My husband certainly didn’t, he just cleaned his plate with a smile and headed back for seconds.   

Preparation was as easy as any other pancake and waffle mix.  Simply add oil, water, and one egg and pour onto a preheated pan or griddle.  For vegans or those with egg allergies, suggestions for preparing the pancakes and waffles without the added egg are also noted. 

The results were surprisingly glutinous.  The pancakes didn’t break apart or crumble one bit, as gluten-free foods often do.  Since the Namaste mix contains no added sugar, I truly enjoyed these stackers with a touch of pure maple syrup or jam. 

As an added bonus, the pancakes freeze very well.  The first batch made more than I had anticipated, so I wrapped a few for the freezer.  A couple of weeks later when the munchies hit, I took a few out and popped them in the toaster.  For a savory snack I slathered them with peanut butter, and enjoyed.  

  • Pros:  Kosher certified; All-natural; Made in a dedicated facility that is free from gluten, wheat, potato, corn, soy, dairy, and nuts; Vegan; Easy to prepare; Consistent results; Freeze well; Low in sugar
  • Cons:  They are a touch higher in sodium than I would expect of pancakes

Recommended for:

  • Breakfast!
  • Sunday Brunch
  • Snacking Cakes (topped with peanut butter or jam)
