Pamela's Chocolate Cake and Dark Chocolate Frosting Mixes (Vegan, Egg-Free, Soy-Free) PDF Print E-mail

Well I finally got around to baking something else this weekend! Of course I was not going to let my niece's Birthday weekend go by without something special for her. So on Saturday I got up, worked out and got to work in the kitchen.

I was using the Pamela's chocolate cake mix with the dark chocolate frosting mix to go on top. I would have made vanilla frosting and colored it pink or purple but my niece wanted chocolate frosting, much to [my daughter’s] chagrin! Why wouldn't a six year old girl want pink frosting?? Well if you are my niece...the sporty spunky little punk- you get chocolate.

Once again, I am amazed at the ease of a Pamela's baking mix, no warm water, no adding wet together, then mix with dry set aside, blech!!!! Throw everything in a bowl! The only word of caution is not to over mix. I don't really understand that one, but I suppose if it is over mixed- it will be too chewy and not soft. So I undermixed the mix and had to scrape down the sides of the bowl and make sure all the powder mix was wet!

Once I had the cupcake tins filled and ready to go I popped them in the oven and got to work on the frosting. Again, love how easy this is. Mix together the margarine (just has to be softened- not melted!) and a dash of water. Since this was ready before the cupcakes were done baking I happily tasted some. And I was happy I did!

LOVE, LOVE, LOVE!!! And this frosting- WAS in that LOVE category!!! The flavor was everything you could hope for in a frosting plus a little extra richness that comes with a Pamela's product. Better than the canned frosting; a thousand times better than the supermarket frosting. It made me think of my mother's butter cream frosting that I grew up scraping out of the food processor before birthday parties and holidays. The chocolate flavor was almost unreal. Rich and creamy, this frosting had everything you could need in a frosting.

The smell of chocolate was soon flowing through the whole house and I was getting anxious because it smelled so good, I was afraid I would eat all of them before the party started.

The frosting spread over these suckers easily. I put some pink and yellow sprinkles over the top and vamoooos! Beauty in cupcakes!

Now for the fun part- trying them out!

We sang happy birthday real fast after dinner and everyone dove for the plate of cupcakes. They were sooooo yummy! My grandmother was impressed. My father ate three. My mother swore she would not eat another one and I had a second one for her. And she still had a second one anyway. No one could guess they were gluten or dairy free.

The cake part was lusciously rich and chocolaty. I definitely did myself a favor by NOT over-mixing and just getting the batter wet. They were soft but not crumbly and had this amazing chocolate flavor- better than any other mix I have had in a while.

The cupcakes did not make it through the night. We ate them all. And best of all, the birthday girl loved them. Which in my mind made it all worthwhile.
