I decided to work on my birthday and when I got there I instantly regretted it. It was a busy, hectic day. I wished I was home in bed, sleeping! After having a non-exciting day I was eager to get home and hang out with the Peanut and Taste Tester and the rest of the family. When I got there, the Peanut jumped out of the dining room yelling, "SURPRISE!!!" Her hands were empty! I laughed and asked her what the surprise was. She says, "oh I don't know. I don't know where it is!" Too cute. She and my mother had made me a cake. My mother had actually made the Pamela's vanilla cake and vanilla frosting! It was the best birthday cake idea ever. My mother said she used an Earth Balance margarine stick in the frosting, and she definitely made the cake dairy-free too. I was happy, since I had been debating about whether or not to make my own cake. But here it was, right on the kitchen table. The Peanut had decorated it herself; with some pretty pink flowers and coloring in the frosting. Well enough about how the Peanut makes me smile... lets move on to the cake! I didn't eat dinner with the family. I wanted a big huge piece of cake! I sliced into the cake and already I knew it was moist, the vanilla color on the cake was perfect. Light tan with just a hint of yellow in it. That to me is perfect vanilla. The cake sliced easily and was only slightly sticky on the tray. So texture wise- we were already rivaling your traditional bakery cake. One bite in and I knew the rest of the cake would be gone in a heartbeat. The frosting had a rich buttery taste but it was still sweet enough to be enjoyed by the masses. It was a little on the soft side, my mother said she didn't use all the margarine the recipe called for because it got a little too thin- so watch out for that while making the frosting, but it tasted great! The cake part was rich as well but it still had that light fluffy cake feeling in my mouth. It was not chewy nor was it too sugary. It was literally perfection in a vanilla cake. I wished the mix made it slightly bigger. It went well into an 8x11 pan, but I like a high cake as it means bigger pieces. But this was fantastic enough that I didn't really NEED that second piece- even though- I went for it! If you need a cake that will please the gluten-eating masses, then go with this cake for the ultimate vanilla experience. Pamela's vanilla cake does need to made with eggs and not an egg replacer, so if you do have an egg allergy- this will not work for you... please see the Pamela's website for more details.
