Alisa Fleming ~ Even though I haven’t been gluten-free in the past, I found myself at numerous gluten-free events this past year, where I had the chance to sample dozens upon dozens of products. Some were just okay, some were quite good, but just a few were excellent. One little company that really hit the mark was Zema’s Madhouse Foods. At the Gluten-Free Allergen-Free Expo, they showcased about a half dozen prepared goodies using their baking mixes. My friend AndreAnna was fixated at the Zema’s table, causing me to inhale at least four or five samples of their Sunbutter & Jelly Bars.
What AndreAnna and I loved most about this company, beyond the fact that their mixes produced very tasty baked goods, was their commitment to using wholesome ingredients. Most gluten-free baking mixes are very starchy and primarily packed with “white” flours and/or heavy bean flours, but Zema’s takes a multigrain approach, using teff, millet, and gluten-free oat flours along with omega-rich seeds like flax, chia, and hemp … perfect for those of us who like the taste and nutrition of whole grains.
Since my husband is trialing the gluten-free diet, I decided to sample one of the Zema’s mixes at home, the Cinnamon-Oatmeal Mix made with gluten-free dedicated oat flour. I followed the directions on the package for making Cinnamon-Oatmeal Flatbread (using a whole egg rather than egg whites), and the results were quite delicious. Rich with cinnamon, hearty, moist, and quite tender … this was a lightly sweet treat that went over nicely with a slathering of nut butter and a mug of hot tea. The rest of the mixes in the Madhouse line are anything but ordinary. They include: Zema’s Mixes aren’t the cheapest on the market, but you definitely get what you pay for in terms of higher quality and convenience! See their Facebook page (below) for ordering information and a ton of great recipes … Dietary Notes: By ingredients, the mix I reviewed is Vegan, Dairy-Free, Egg-Free, Gluten-Free, Nut-Free, Peanut-Free, Soy-Free, Wheat-Free, Low Fat, and Sugar-Free, but see the packaging for allergen and manufacturing "may contain" labeling. Also, the directions do call for eggs, which you may be able to subsitute for, and maple syrup or other sweetener.
