500 Vegan Recipes: An Amazing Variety of Delicious Recipes, From Chilis and Casseroles to Crumbles, Crisps, and Cookies by Celine Steen and Joni Marie Newman

 

Usually I find large tombs of recipes a bit too overwhelming. But after falling in love with 1000 Vegan Recipes by Robin Robertson, I felt that I could easily take on 500 Vegan Recipes, especially when the cookbook is written by two of my favorite bloggers, Celine (of Have Cake, Will Travel) and Joni (of Just the Food).

I think what I found most fun about this cookbook, was trying to decipher who wrote which recipe. Joni and Celine each have their own distinct style, but at times I can tell they found some very common ground. The recipes merged and diverged throughout the cookbook creating a very fun assortment to choose from.

Seriously, I am so impressed with this cookbook. The intro is very brief, but helpful, as these ladies want to jump right into the recipes … all 500 of them. And I was right there with them. After oohing and awing at the many unique but simple-sounding recipes (I love that these ladies don't believe in long ingredient lists) I headed to the kitchen.

Love the simple ingredient list in this recipe. The granola is just lightly sweet (my husband the sugar-aholic wanted more jam on the next go around) with an awesome texture and a slightly salty bite that I loved.

 

Blackberry Nut Butter Waffles

Awesome taste and oh so filling, but be warned that they might stick to cheap waffle irons like mine (I always have problems with waffle recipes containing nut butter) - Hence why my picture is not on the gorgeous side.

Yes, I finally got past the breakfast section! This was my first time roasting fennel and what a flavor combination this made. I will be making this again, but will probably turn up the heat to at least 400ºF (the recipe calls for 350) as the veggies released a bit too much moisture, not drying out quickly enough.

 

Rustic Potato Leek Soup

Rustic Vegan Potato Leek Soup

Both the name and the recipe list are brief and simple, but the resultant soup is incredibly flavorful. Both my husband and I fell in love with this soup, which has a couple of surprise ingredients. See my slightly modified version of this recipe here.

 

Since there are so many recipes in this book, I can safely say that there are numerous options for almost everyone. While there are some recipes I probably won't try (ie those that use faux meats or seitan since I don't usually cook with these), there are hundreds more that appeal to my tastes. 

After 5 recipes, I would usually feel like I had given a cookbook the full review, yet I still have 495 recipes to consider in this book, with dog-ears on the following to trial next:  Cumin Carrot Soup, Smoky Pumpkin Marinara, Peanut Brittle Cookies, Spicy Asian-Inspired Macaroni Salad, As-You-Like-It Energy Bars, and oh, the list goes on …
