Finally... Food I Can Eat! by Shirley Plant We recently received a copy of Shirley Plant’s book titled, “Finally…Food I Can Eat”, now in its third printing. It has a beautiful photo on the cover of a delicious quinoa dish which was the first thing I made from the book. My presentation wasn’t quite as amazing as the photo on the cover, but the taste was delicious. In reading through the recipes, I loved how Shirley gave lots of options. If you don’t like white potatoes, use sweet potatoes. If you want to substitute kamut flour for oat flour and kamut flakes for oat bran, she shows you how. At the top of each recipe, it gives a listing of the foods that the recipe is “free” of. However, these can easily be substituted depending on your families food allergies. Next was the potato and leek soup. I’ve never made soup with leeks before and this one was super easy and delicious. Even my hubby said “you should make leek soup more often.” Finally, we tried the pineapple meatballs (p.83) which were delicious and even the kids liked them! The recipes are simple to follow with clear directions. The cookbook opens with some great information about food alternatives including dairy alternatives for 1 cup of cow’s milk. She outlines different types of grains and flours and different legumes which are really helpful too. About the author: Shirley Plant has studied the field of nutrition for many years.
