I’ve met and spent time with her in person, and she is the real deal … energetic and fit, yet an everyday person who has dealt with her own weight issues in the past. Lori has found optimum health through an “almost paleo” diet. She focuses on whole foods that are low glycemic, and her new ebook, Resolution Recipes, is a compilation of several of her favorite recipes. Resolution Recipes is 95% paleo, gluten-free, and dairy-free (there are two recipes that call for a small amount of goat cheese, which you can omit if desired, and a couple recipes that use Greek yogurt, but you can use dairy-free yogurt instead). This is a “clean eating” collection with roughly 20 recipes, including smoothies, salads, meaty main dishes, and nutritious sweet treats. Please note that Lori does use eggs in many of her recipes.
