For dinner I had NO CLUE what to make. This usually calls for apples and peanut butter. Or cereal, but tonight I decided to go extra carby and try the Mini-French bread from Island Gluten-Free Bakery. 
Not too bad in the nutrition department! 6g of fiber! Plus it's made with Olive Oil and not butter- so the extra fat in there you know is healthy fat. I defrosted this in the microwave for two minutes, and then popped it in the oven in some tinfoil for five minutes. It toasted up perfectly- no burned spots- and not squishy at all. I love toasty bread. It sliced perfectly when I cracked it open- not a crumble to be found. What luck! The taste? Out of this world. French bread has that nice sweet taste to it that makes you top it with gobs of butter and dip in marinara sauce... well at least for me it does. And this was NO exception to my French bread hankering! I topped it with gobs of Smart Balance and literally inhaled it. It was so good! Perfect! The texture wasn't CHEWY or sticky like other GF breads. It was just amazing.
I know, I know, I'm so tough to please! But seriously- excellent! I definitely wish I had more of these, they were a perfect addition to my pantry..errr... freezer!
