This one is a Vanilla Cupcake. Now, whoever knows me knows I am a stickler for desserts of all kinds. I love love love cupcakes like it’s my business so I was really excited to try this out! I cracked open the container and immediately grabbed one. The top of it was sorta sticky like it had a "glaze" on it. What was that? No matter. I bit right in and immediately went WHAT?! What was I tasting? I grabbed the bag and looked at the ingredients.... it was orange! There is orange in these vanilla cupcakes! Very strange. The texture of the cupcake was definitely not a soft cupcake, so anyone looking for a fluffy moist cupcake should not look here. This is a dense cake, more like a pound cake I would say. The orange flavor in it definitely made it seem MORE like a pound cake than a cupcake I should say. The cupcake was not dry however, perfectly balanced out. Once I got past the orange, I would say this is a tasty little treat. Ok- I gotta give this one a 7 out of 10. I didn't like the orange flavor that much and I feel like it should be named as it is... a pound cake! So maybe the same recipe in a loaf format?! Ingredients: Gluten free flour (White Rice Flour, Tapioca Flour, Corn Starch,) Egg, Sugar, Orange Juice, Canola oil, Baking Soda, Xanthan Gum, baking powder, Vanillin.
