If there were only one grain we could eat, both my husband and I would choose rice. I know, many bloggers out there are screaming about their oats, but we love rice in every form. While others reach for that bowl of oats or toast, I slather nut butter and honey on brown rice cakes. So, it may come as no surprise to you that I love to make homemade granola bars and they always include rice crispy cereal (okay, they have oats in them too). However, I ran into a few problems when seeking out the perfect rice crispies for my bars. First off, the sugar; way too much for such a simple food. It just seemed unnecessary. Second, much of that sugar was in the form of high fructose corn syrup. Yes, we grew up thinking we could trust Snap, Crackle, and Pop, but can we really? Third, I really prefer brown rice to white rice, no matter what the medium. So off I went, in pursuit of all natural, low sugar, brown rice crispy cereal that tasted good. Sound like an impossible mission? At first I thought it was, but then I found Erewhon Crispy Brown Rice Cereal. It comes in regular, no salt added, and gluten-free versions (the other two versions use a touch of barley malt syrup), is organic, contains just two or three (if salt is added) ingredients, and has just 1 gram of sugar per 1 cup serving. And the taste in my homemade granola bars? Perfection! My family enjoyed them so much that I made several different kinds. Starting with cinnamon raisin, and then moving onto Chocolate Chip Almond Granola Bars ... and White Chocolate Cranberry Granola Bars ...
