Everything about Erewhon’s Organic Aztec Crunchy Corn & Amaranth Cereal is incredibly unique; starting with the puffed up triangular shapes! The shape segways into the very crunchy yet slightly chewy texture, which is a good match for any milk alternative, and the various air pockets throughout each piece, which allow the “milk” to nicely seep into it. The flavor is very mild, without any overpowering notes. The simple, unsweetened flavor does have a slight corn taste, but it is still a distant cousin to cornflakes. I enjoyed the cereal with sweet seasonal blueberries and unsweetened almond milk. It was a nice pairing, but for a treat I think vanilla almond milk or vanilla coconut beverage would step it up a notch. I am not sure about other uses for this cereal aside from the morning munchies. It is possible that it could be used as a coating when crushed or ground, though the texture didn’t strike me as quite right for a crispy rice replacement. Aside from the organic profile, the Aztec cereal is organic, all natural, fat-free, and very low in calories – just 110 calories in an entire cup! As you will see from the ingredients below too, it has no added sugars, and in fact has only 1g or sugars per serving; a definite plus in my book. Though, I wouldn’t try to pass it off on any Captain Crunch loving family members! Ingredients: Organic corn flour, organic ground whole amaranth, organic apple juice concentrate, sea salt.
