A few years ago, when we dove into the natural food movement, my husband and I agreed to buy only organic corn products. Though the consequences aren’t fully understood in the GMO push (environmentally or health-wise) , we knew that genetically-modified foods were not something we wished to have in our diets. Corn, like several of the other top crops in the U.S., is often genetically-modified, and the food labels don’t help us distinguish … with the exception of that “certified organic” stamp of approval. By definition (for now), organic foods cannot be genetically modified. I still struggle to find organic corn on the cob in my area when picnic season kicks up, but I have at last found some reliable and good organic corn flakes! Corn flakes? Yes, corn flakes. We aren’t talking a dietary staple here, but I always seem to come across these super-easy recipes that call for corn flakes, which I am just dying to try. There are only two brands of organic corn flakes I have located in my area, and one contains added sweeteners … so out with that one … … and in with a box of Erewhon’s Organic Corn Flakes. 
Since I know there are some serious corn flake lovers out there, I did a cereal bowl taste-test first. They were perfect! Everything corn flakes should be … very crispy/crunchy, fresh tasting, and pure in flavor. Though, what else would I expect from a cereal that contains only organic milled corn and a touch of sea salt? Yes, no sugars, no gluten, no dairy, nada. Just corn. For my daily uses, it was time to test out a recipe. I made Oven “Fried” Fish (we used Hoki, though cod or halibut would work nicely too) … It came out so light and tender, with a delightful crisp coating that complimented the flavor perfectly. Both my husband and I were impressed and satisfied. In fact, my husband liked it better than any of the fish recipes we have tried in the past!
