Alisa Fleming ~ I recently discovered that Uncle Sam cereal now comes in four varieties, and the ingredient lists were shortened even more to make the cereals even more wholesome. Here is my take on each variety ... Uncle Sam Original Cereal – This truly is a whole food cereal with just four ingredients! Whole wheat kernels are basically pressure cooked, flattened, and baked to a crisp. Whole flaxseeds, a touch of salt, and just a few drops of barley malt are added (each serving contains less than 1g of sugar). The result is a hearty cereal that offers 10 whopping grams of fiber per 3/4 cup. Since it isn’t a sweet cereal, my favorite way to enjoy Uncle Sam’s is with unsweetened almond, rice, or coconut milk beverage (to keep it mostly sugar-free!), diced bananas, and a generous sprinkling of cinnamon. This is easily my new favorite go-to cereal, and it works great in quick recipes! I whipped up these crispy and nutritious peanut butter treats in minutes ... Since transitioning from sugar cereals to unsweetened whole grain cereals can be a shock for some, Attune created three “gateway” cereals that are lightly sweetened and delicious: Uncle Sam Multigrain Cereal – This is the next step from the Original, with oat flakes and a touch of sugar added (6g per serving). I loved that it was still just lightly sweet, but could stand on its own in “milk,” and had a nice contrast in grains. It looks very similar to the Original, but has a whole new element of taste. I really enjoyed it with unsweetened almond milk and fresh blueberries. Uncle Sam Honey Almond – I love honey, and was pleased that this cereal had that wonderful kissed-with-honey taste. For those who prefer unrefined sweeteners, this one has just a bit of honey and evaporated cane juice (again, just 6g of sugar per serving). I enjoyed eating the Honey Almond cereal out of hand, as the smattering of almond slices gave it an almost trail mix vibe. Uncle Sam Strawberry Cereal – Attune Foods is quite generous with the freeze-dried strawberries in this healthy breakfast cereal! Gently sweetened with evaporated cane juice, this one fits nicely into the mix with its fruity vibe. I preferred this one in milk alternative, rather than for snacking, since the strawberries rehydrate and come alive. To note, all of the Uncle Sam Cereals are dairy-free, and in fact made in a dairy-free and peanut-free facility, which is why I’m proud to act as a spokesperson for them.
