I kid you not when I say I grew up thinking that chocolate was a manufactured food. Once I could read, add, and subtract, the grocery store became my playground. Reading ingredient labels and attempting to accurately calculate the final bill before we got to the checkout kept me busy (to my mom's delight) ... and I absorbed a thing or two. We were a household of the '70's; we didn't buy pure dark chocolate. We bought chocolate syrups and spreads. Even then, I remember the ingredients looking like a chemical supply list, and milk ingredients were typically ranked higher than the word chocolate (sometimes simply used in the phrase "chocolate flavoring").

It wasn't even until recently that I made the solid connection between cacao beans and chocolate. But thanks to the raw food movement, my knowledge keeps on growing, and my appetite just gets more and more satisfied. Terms like raw cacao and cacao butter are now things I seek out when I get a craving for chocolate. Needless to say, my cravings quickly led me to Artisana Cacao Bliss.

Artisana first came onto my radar due to their nut butters, but as I later discovered, they also work a good deal of magic with coconut oil and coconut butter. With it, they have created Cacao Bliss, which is what they call "... a rich, creamy, chocolaty coconut spreadable nectar." I have no room to argue with this.

Cacao Bliss is solid at cooler room temperatures, but once the jar is allowed to sit in a hot water bath for a few minutes, its contents turn into a smooth, spreadable chocolate ...

We enjoyed it as the "icing" in our graham sandwich cookies. I popped the grahams in the fridge for just a couple of minutes, allowing the sauce to re-thicken into more of a thick frosting consistency. If you are expecting an Oreo-like icing or that Hershey's sweetness, this isn't it ... but a rich deep spread with a dark cacao flavor and pleasant sweetness it is ...
