Who would have thought Potato Cookies could be so good!  Although we have a grain “rotator” among us, we are not a wholly gluten-free crew.  However, I wouldn’t be surprised if we see a few more gluten-free casein-free days since the discovery of these Potato Cookies.  Our toughest reviewer, my husband (of course) said “pretty good”.  He gave them a solid 4 out of 5 stars.  They reminded him of a more indulgent cookie, but he couldn’t pinpoint it.  By the end of the day, I had to up my husband’s review to 5 stars, as he had consumed the whole bag!  Of course, he left one for me to sample.  They were delicious.  Little bites of chocolate in a slightly sweet shortbread type cookie.  I found them to be flavorful, a touch indulgent (but not over the top), and great with tea or coffee.  Gluten is not missed in these little gems.  I was excited to discover that we had been sent a second bag of the potato cookies.  I planned to take them with me to a soccer tournament for my team to sample.  Unfortunately, my husband wouldn’t let me take them.  He quarantined the bag and ate the whole thing while I was out of town!  No more needs to be said.

  • Pros: Relatively low calorie; Gluten-free; Taste like those bad for you “Store Bought” cookies only better
