Cafferata Frozen Artichoke Raviolis (Vegan, Soy-Free) PDF Print E-mail

Stuffed raviolis are far and few between for dairy free dieters, but Cafferata has managed to keep one variety on the shelves.  This all-natural pasta (even the colors are made from vegetables and spices) is packed with a unique blend of artichokes, lemon, and parsley. 

The pasta itself is delicious, and has a fresh taste from the added herbs.  The inside texture is very similar to mashed potatoes, though the ingredients list breadcrumbs, potatoes, and garbanzo beans as fillers.  The base flavor is relatively neutral, but the artichokes add the extra pop that good raviolis require.  Luckily, the lemon was not too strong, as I am not a huge fan of lemon-flavored foods (aside from candy of course!). 

This pasta would probably go best with a simple butter flavored (non-hydrogenated) margarine, or a douse of extra-virgin olive oil with some sprinklings of vegan Parmesan.  Unfortunately, I was out of all of the above, so I opted for a very light tomato sauce.  It complimented nicely as well.

The package contains about 17 good-sized raviolis.  I would say it was pleasantly enough at lunch for two, though a hungry carb fan could easily eat the whole package.  Luckily, each serving only contains 160 calories (roughly 400 for the whole package), 1 gram of fat, 1 gram of sugar, and 280mg of sodium.  As an added bonus, there is 6 grams of protein per serving (15 per package). 

I couldn’t resist purchasing this pasta when I spotted it on sale for $2.50 a package, and wouldn’t hesitate to buy it again when the next sale strikes.  Aside from the taste, the 10-minute preparation was a dream come true. 

Luckily this Artichoke Ravioli remained in good standing when their two other dairy free pastas were discontinued (Soy Good 4 U Raviolis, Lemon Tortellini with Olive filling).  Perhaps with some friendly requests Cafferata will restart the vegan R&D.
