One Lucky Duck Rosemary Quackers (Vegan, Gluten-Free, Soy-Free) PDF Print E-mail

QuackersPeering through the see-through package were squares of what really did appear to be crackers.  I was still in disbelief that these could possibly be “raw” and free from flours.  But there was only one way to find out, I must eat them.  Mustering all of the will power I could gather, I refrained from taking a sneak peak at the ingredient list for a truly candid taste test.

They were quite similar in size and appearance to Wheat Thins, though with an obvious nutty vibe.  Just as I was about to sink into my first bite, the pungent aroma of rosemary grabbed hold of my senses.  It was a warm fragrance that I had to pause for a moment to enjoy. 

The Rosemary Quackers also had a comparable texture to Wheat Thins.  The initial crispy cracker bite quickly mellowed into a softer, more forgiving feel.  There were just two textures differences I noticed.  First, I would classify these as “Wheat Thinners,” as they were a bit slighter in thickness.   Second, the tiny chunks of almonds seemed to stay behind, lodged in the tops of my teeth, once the cracker was gone.  This would prove to be my only complaint about these “raw” crackers.

Aside from the almond remnants, they did taste remarkably like crackers.  But not exactly, these were better.  The rich flavor actually tasted far superior to what now seemed like ordinary, run of the mill flour-based crackers.   I was pleasantly surprised by the light “cheesy” taste, which melded incredibly well with the sizable pieces of rosemary.  Knowing that these were in fact vegan, I was certain that nutritional yeast was behind this flavor enhancement.  However, that dreaded “yeasty” taste was nowhere to be found.  This was a seriously delightful “cheese” and herb combination with plenty of full-bodied flavor.  

Feeling adventurous, I pulled out a package of Cheddar Sheese for a little dairy-free “cheese and crackers.”  With many years between this experiment and my last real cheesy encounter, it would be difficult for me to verify authenticity.  But they were REALLY good.   That should count for something.  I polished off a mini-wedge and a handful of Quackers in no time. 

So what are the ingredients?  I was utterly shocked at the simplicity of these flavor packed snacks.  They contain only almonds, organic flax seeds, nutritional yeast, organic rosemary, and Himalayan crystal salt.  Well what do you know, they even sound rather healthy.  I will ignore the latter thought for now, so that I can continue to fully indulge in this rich and cheesy experience.

My Extra Notes and Tips

  • Leave these out on your entertaining table with just a couple of dairy free cheeses or mild creamy dips to accompany them.  It is likely that they will be gobbled up plain, but they can certainly hold their own as a medium.
