Amy’s Organic Butternut Squash Soup (Vegan, Nut-Free, Soy-Free) PDF Print E-mail

While both my husband and I enjoy butternut squash, anything involving a puree of this large “fruit” seems to remind us too much of baby food.  Plus, while butternut squash itself has a light sweetness, most brands of butternut soup tend to load up the ingredients with syrupy sweeteners. 

Fortunately, Amy’s remedied both of these issues with their canned version of butternut squash soup.  Nicely thinned to a smooth and soupy texture, we were unable to detect any squashy puree.  Plus, while they did add a hint of evaporated cane juice, Amy’s did not go overboard.  The sugar enhanced the natural sweetness without overloading my taste buds.

I sampled the soup plain first, to get a feel for the taste.  It was pleasant, lightly sweet as noted, and good for sensitive palates.  However, in case you haven’t read my other reviews, I just can’t leave soup alone.  And this one, in particular, seemed to establish itself as a backdrop rather than a stand-alone dish.  Served with jasmine rice, steamed spinach, a few shreds and fresh basil, and topped with some finely chopped pistachios this soup took on meal status.  It was still a touch bland.  I would vote for just a dash of crushed red pepper flakes on any future butternut endeavors. 

 Where to Purchase: Amy's products are sold throughout the US, in most grocers. But shop around though, as many mainstream grocers mark Amy's products up far beyond the prices in natural food stores (surprisingly).  Of course, you can also purchase many Amy's products, including the soups, direct from the Amy's Store
