This soup has a heat that sneaks up on you ... the kind that makes you keep eating, quickly, to keep it from catching up with your taste buds.  It was a 180 in terms of spice from the Low in Sodium Lentil Soup we had just trialed the day before.  I loved the flavor, though my timid taste buds couldn’t eat it as a straight soup. 

To tame the heat, I made a meal for two out of the single can, pouring it atop two bowls filled with a base of brown rice and steamed sweet potato chunks. It was a perfect combination.  The soup itself contains organic black beans, potatoes, carrots, and corn all in a spicy, tomato-y base. On its own, if you can handle the kick, the entire can would make a good light meal for one.

Considering how wonderfully it worked as a meal base, and how deliciously flavorful it was, this Amy’s soup is definitely going on my shopping list in the future. 

Aside from the slightly high sodium (on par with your average canned soup though), this is an amazingly virtuous soup.  It is 99.9% organic, and consequently, made with “real” ingredients, even boasting a fair dose of Vitamin A, Vitamin C, and fiber. 

 Where to Purchase: Amy's products are sold throughout the US, in most grocers. But shop around though, as many mainstream grocers mark Amy's products up far beyond the prices in natural food stores (surprisingly).  Of course, you can also purchase many Amy's products, including the soups, direct from the Amy's Store
