Amy’s Organic Lentil Vegetable Soup - Light in Sodium

Sadly, my first thought was, "hmm, needs salt."  Resisting the urge I reached for the pepper grinder, both my husband and I though this was a good move.  While I often find Amy’s Chili (even the medium) a bit too spicy, this soup was a bit on the bland side, lacking some needed zing. 

Nonetheless, I liked the heartiness of this soup.  Rich with lentils, and light on liquid, it was almost like a chili in consistency.  I could easily fille up on a whole can.  But instead, I served it over brown rice, making a little lunchtime meal for two.

Luckily, I like lentils, because this was one lentil-y soup!  But alas, my taste buds still seemed to long for that soupy sodium.  Keeping the saltshaker under lock and key, I served these lentils atop some quinoa and steamed sweet potatoes.  The sweet potatoes offered just enough contrast to jazz things up.  I also added some freshly ground pepper, however, in the case of this soup, it really wasn’t a good blend.  There was some other herb or spice that this soup was shouting out for, but I couldn’t quite understand what it is saying.  Cumin? Paprika? Rosemary?  Perhaps some future experimentation will tell.

Rich with lentils, this was one of Amy’s more filling soups.  Only small bits of other veggies were detectable, so I do recommend adding a few of your own, or serving it alongside a salad. 

Sad but true, I seem to love the sodium in my canned soup.  Amy’s Fire Roasted Southwestern Soup and Thai Coconut Soup leapt ahead in the competition to fill the few convenience food slots I have open on my regular grocery-shopping list.  But, if you are watching your sodium intake, these are definitely two worthy contenders.

  Where to Purchase: Amy's products are sold throughout the US, in most grocers. But shop around though, as many mainstream grocers mark Amy's products up far beyond the prices in natural food stores (surprisingly).  Of course, you can also purchase many Amy's products, including the soups, direct from the Amy's Store
