This was a "meal" in a soup! The coconut milk base made the soup rich, and of course a bit fatty ... BUT ... for those of us who extol the virtues of coconut milk, this is a good thing. The flavor was reminiscent of a mild curry, warm and lightly spicy. Luckily, there was not enough heat to scare off more senstitive palates. In terms of consistency, it was mostly soup, with just a few bits of sweet potatoes, green beans, shiitakes, and meaty tofu to break up the fluidity. Since the additions were sparse, I was glad that I had prepared some brown rice, and steamed a small sweet potato (diced) and a cup of spinach (if you have read my other Amy’s soup reviews, you may sense a pattern). Really, it was a perfect match. I love having loads of rice to soak up leftover curry, so I felt like I was dining out at a Thai restaurant. For a little variety, I think this soup would be excellent with some sauteed eggplant and other steamed greens. I think some further experimentation is definitely in order with this delicious soup. While I would love to make my own homemade curries and coconut soups, I have only done so once or twice to date. So, until I become more adventurous in the kitchen, this Amy’s soup will probably make its way into my basket whenever it is on sale. Where to Purchase: Amy's products are sold throughout the US, in most grocers. But shop around though, as many mainstream grocers mark Amy's products up far beyond the prices in natural food stores (surprisingly). Of course, you can also purchase many Amy's products, including the soups, direct from the Amy's Store.
