Amy’s Organic Tuscan Bean & Rice Soup (Vegan, Gluten-Free, Nut-Free, Soy-Free) PDF Print E-mail

If I had a cold or the flu, this deliciously warming soup would be my go-to meal.  It had a wonderful tomato / vegetable soup-based flavor with a warming spice that added interest without too much heat.

The rice within the soup was very fine, almost like small pieces of barley.  I added some more pinto beans and frozen corn (both organic to keep with the theme of course) as I felt the soup was still light on add-ins.  Plus, I was splitting the can with my husband.  At just 160 calories per ½ can, I knew that this soup wouldn’t tide us over for long.

Amy's Tuscan Rice & Bean Soup

We both enjoyed it, I only wish I had another can on hand for my husband who now has a cold!  Back to the store I go.

Where to Purchase: Amy's products are sold throughout the US, in most grocers. But shop around though, as many mainstream grocers mark Amy's products up far beyond the prices in natural food stores (surprisingly).  Of course, you can also purchase many Amy's products, including the soups, direct from the Amy's Store
