Cucumber Mojito (Vegan, Gluten-Free, Nut-Free, Soy-Free) PDF Print E-mail

Cate O’Malley, The Spirit World - This week, on an episode of Style Network’s Pantry Raid, Chef Michael Schulson did a mojito with a twist … cucumbers.  Sounds like the perfect drink to kick off a cocktail party with a refreshing note.  Bottoms up!

Cucumber Mojito
2 cucumbers
1 cup lemon juice
1 bunch fresh mint leaves
16 ounces rum
16 ounces club soda
1/2 cup sugar
Ice

Peel and muddle the cucumbers, using a mortar and pestle if you have one. Combine muddled cucumber, lemon juice, mint, rum, club soda, sugar and ice. Stir and serve on a warm summer day.
