Very Simple Blueberry Muffins (Vegan, Soy-Free) PDF Print E-mail
This fabulous reader recipe was posted to VegWeb.  We assume that you can safely substitute a soy free rice or almond milk for the soymilk, which is why this one is referenced as soy-free.

Yield: Approximately 8 muffins

Ingredients:

  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 3/4 cup soymilk (or other milk alternative)
  • 1/4 cup oil
  • 1 cup frozen blueberries

Directions:

  • Preheat oven to 400F.  Place baking cups in a muffin pan.
  • Combine flour, sugar, salt, and baking powder together in a mixing bowl.  Add soy milk and oil. Mix.
  • Fold in blueberries.
  • Pour into baking cups and bake for 25-30 minutes.

I am allergic to wheat. Do you think I could make these using rice flour?

I have made muffins with all brown rice flour, and while they work, they do crumble more and tend to get that sandy texture. I haven't baked with white rice flour, which may yield better results. I would add in a touch of xanthan gum if you have it on hand and a starch, such as potato or tapioca for a better texture. The sure fire way for a good result though, would be to get a GF flour blend. It takes the guess work out.
