The reasons to relax, spend time with family, and enjoy a little indulgence are doubled. The stores are closed, most businesses are dark, everything pretty much shuts down, leaving you with no excuses ... it's time to relax. And while you're at it, pick the laziest, most indulgent recipe and enjoy it for breakfast ... at noon, in your pajamas, because you shouldn't be in a hurry to get anywhere.

Now you might be wondering, what recipe can you throw together with very little effort, and probably nothing but leftovers on hand, that will taste decadent and yet suitable for a brunch-style treat? Why French toast of course! Stale bread, spices, and some holiday gingerbread men and you are ready to go. Yes, I said gingerbread men. Because, why not?

This fun twist on French toast comes from the kitchens of Rudi's Gluten-Free Bakery. They created the recipe to showcase their gluten-free bread, but you could use gluten-filled bread if you prefer (such as Rudi's Organic 100% Whole Wheat).

For an egg-free and vegan option, try this Pumpkin French Toast recipe from the PPK. But don't forget the gingerbread cookies, as they really are the essential ingredient in this recipe. No gingerbread guys on hand? Any festive cookie should do ... vanilla sugar, shortbread, molasses, anise ...

Gingerbread Spiced French ToastIngredients

Instructions

  1. Combine eggs, milk, cinnamon, allspice and powdered ginger in a shallow bowl and whisk until well blended
  2. Dip slices of bread into shallow bowl until completely saturated
  3. Heat oil in a skillet and fry bread on both sides until well browned
  4. Sprinkle with fun toppings such as gingerbread men, maple syrup, and powdered sugar!
