Soy Whipped Cream (Vegan, Gluten-Free) PDF Print E-mail

I haven't tried this with other "milks" I wonder how it would work?

Ingredients:

  • 1/4 cup soy milk
  • 1/2 cup vegetable oil
  • 1 Tablespoon maple syrup
  • 1/2 teaspoon real vanilla extract (if you use vanilla soy milk, you an omit this)

Directions:
Place soymilk and 1/4 cup vegetable oil in blender. Blend at highest speed and slowly drizzle in remaining 1/4 cup vegetable oil. Blend in maple syrup and vanilla, add a little more oil if necessary to thicken. This makes enough topping for one pie, or crisp, or angel food cake, or, well you get the picture.

Thank you for the inspiration. I experimented with your recipe as a base and developed a lower fat and calorie alternative for folks concerned with Blood sugar and weight loss/maintenance. It is lighter, has less aftertaste and higher nutritional values.  
Double the soy milk (check the labels on your soy milk, the calories, fats and evil additives do vary).  
Cut the oil (it\\\'s fat no matter how you cut it) by 50%. Use Canola In this recipe, Canola is preferred as the flavor effect is more neutral. 
For sweetness with NO caloric impact, use Stevia. In this recipe, I used 1/8 teaspoon. The key to Stevia as a sweetener is volume control. Less is more.

I just tried this recipe and yielded a cup of emulsified soy milk and oil.

I tried it with Almond Milk and it did not work, I guess that\'s why (no-dairy) sour cream and cream cheese is made with soy. :sigh

I used grape seed oil, turned out great. Nice flavor. I, too, will try the low cal option next. Thanks for that.

I am going to try this out!! My son is allergic to all things dairy & egg whites! I am always ready to try new things without having to spend a lot of money..Plus...Homemade is the way to go! Thx!!!
