3-Ingredient PB Cookies (Gluten-Free, Soy-Free) PDF Print E-mail
My niece Kylie made these simple, yet tasty cookies, and hand delivered them to dozens of neighbors and friends for the holidays.  These cookies are best eaten on the same day, when they are quite chewy.  Store sealed well in plastic to keep them from becoming too crispy.

Ingredients:

  • 1 cup Peanut Butter
  • 1 cup Sugar
  • 1 Egg

Directions:

Preheat the oven to 325.  Combine all ingredients and blend well.  Drop by the Tablespoon onto a baking sheet and flatten with a fork.  Bake for 8 to 12 minutes, or until done.

These were sooo simple to make, but the only problem I found is they were very crumbly, they were great warm they were warm & soft but as soon as they started cooling they were very crumbly. I ate almost the entire batch myself they were so good.

great recipe. I used half a cup of peanut butter and half a cup of almond butter. Delicious

I added 1 cup ground oatmeal (i did this in the blender) to soften them up. Worked like a charm and could probably do more next time. Great cookie to do things with (ie. add dairy-free choc chips, etc). Enjoy!

LOVE these cookies. My mom used to make them for my brother b/c of his food allergies, but I still make and LOVE them! They are a little crumbly, but I'm never opposed to eating the crumbs. :grin
