"Fudgy" No Bake Chocolate Oatmeal Cookies (Vegan, Soy-Free, Wheat-Free) PDF Print E-mail
Try mixing the flavor up by substituting carob powder for the cocoa or almond butter for the peanut butter!

Serves: 18

Ingredients:

2/3 cup maple syrup
1/4 cup vegetable oil
5 tablespoons unsweetened cocoa powder
1 teaspoon ground cinnamon
1/2 cup peanut butter
1 cup rolled oats
1 teaspoon vanilla extract

Directions:

In a saucepan over medium heat combine the maple syrup, oil, cocoa and cinnamon. Boil for three minutes, stirring constantly. Remove from heat and stir in the peanut butter, rolled oats and vanilla until well blended. Drop by heaping spoonfuls onto waxed paper and chill to set, about 30 minutes.

I\'m not sure if I did something wrong but these came out very mushy. They didn\'t set the way other no-bake cookies I\'ve had do. Did anyone else have the same problem?

Hmm, it looks a little heavy on the liquids. You could always grind some extra oats into a powder (spice grinder works well) to soak up excess liquid and help them firm up. Oat flour works wonders for this.

Easy and delicious :p . Not wanting to ruin a yummy recipe I think it would be nice to substitute 1/2 cup peanut butter with 1/2 cup crushed cashews. Another nice addition could be to add some saltanas. I'll give it a go and let you know.

my daughter made these for me the other night, and added a bit more oats and some coconut as well, they were a real treat...definitely a keeper! :zzz

No, but it should work equally well, just make sure it is in liquid format before you use it.

That should work. If anything, you may just need a touch more brown rice syrup, but you can judge after making if it needs a wee bit more.

These were very yummy, but I thought they were quite greasy. Maybe I\'ve done something wrong - Next time I think i\'ll try a bit less oil.
