Mom's Easiest Cupcakes (Vegan) PDF Print E-mail
Thanks to Nicole, a mom who contributed this incredibly simple recipe.  Any brand cake mix can be used, but due to her children's milk and egg allergies, she seeks out ones that will work for them.  She has trialed Devil's Food cake mix and White cake mix (makes more of a spice cake) with great success.  No added oil, eggs, or milk required.  Baking really doesn't get much easier than this!

Ingredients:

  • 1 box cake mix (such as Duncan Hines)
  • 1 14oz can of pumpkin puree

 Directions:

Combine the cake mix and pumpkin, pour into greased pan (cupcake or cake tin), and bake as directed on the box.

These cake mixes include dairy, I've yet to find one that doesn't.

Ah, there are so many great dairy free ones now! Try the ones from Cherrybrook Kitchen, they are my favorites. 
 
Many from Duncan Hines are once again OU parve and made without dairy ingredients, but I tend to avoid them since the other ingredients are less than desirable.
