Oatmeal-Chocolate Chip Cookies (Nut-Free, Wheat-Free) PDF Print E-mail

This recipe was promoted in an article on "Recipes for People with Food Allergies."  I prefer to use Earth Balance margarine (the buttery sticks) as it is free of hydrogenated oils, unlike Fleischmann's.

Oatmeal-Chocolate Chip Cookies (wheat and dairy free)

1 cup (2 sticks) unsalted 'Fleischmanns' margarine-softened
1 cup firmly packed brown sugar
1/2 cup sugar
2 eggs
1 t. vanilla
1 1/2 cups oat flour
1 t. baking soda
1/2 t. salt
3 cups oats
1 package of milk-free chocolate chips [semi-sweet or dark]

Heat oven to 350 degrees beat: margarine and sugars until creamy add: eggs and vanilla add: combined flour, baking soda, and salt stir: oats and chocolate chips mix: all together welldrop: onto ungreased cookie sheet bake: 10-12 minutes until golden brown yield: about 4 dozen
