Peanut Butter Chocolate Chip Cookies (Gluten-Free, Soy-Free) PDF Print E-mail
Sarah over at No Whey Mama whipped these up for a cookie challenge!

 PB Chocolate Chip Cookies

1 cup crunchy peanut butter
1 cup sugar
2 eggs
2 cups dairy-free chocolate chips [Use Enjoy Life brand for soy-free]

Preheat oven to 350 degrees. Mix peanut butter, sugar, and eggs in a bowl with a wooden spoon until blended. Add salt if needed. Stir in chocolate chips. Drop rounded teaspoonfuls 2 inches apart on an ungreased cookie sheet. Bake 10-12 minutes or until cookie bottoms are lightly browned. Cool on cookie sheet 2 minutes before removing to a wire rack to cool completely.

Wow these cookies turned out great. I sure enjoy mine. I used smooth organic peanut butter and wow they are yummy.
