Cheesy Potato Casserole (Vegan*, Gluten-Free, Nut-Free) PDF Print E-mail

The free-from status of this recipe will vary depending on the ingredients you use. Be sure to pick a vegan soy cheese (oddly enough, some brands of soy cheese do contain casein, and are not dairy-free - find the vegan ones!) and if you want to keep it egg-free and vegan, use a vegan mayo like Vegenaise. Check the ingredient labels of your soy cheese and mayo if you have nut-free, gluten-free, or other free-from requirements.

Potato Casserole

  • 10 potatoes
  • 1/2 cup mayonnaise or Vegenaise for vegans
  • 1 package soy cheese, chopped
  • Dash sea salt

Boil potatoes.  When cooked, drain and mash potatoes.  Place in oven proof bowl.

Add 1/2 cup mayonnaise or vegenaise.  Add chopped soy cheese.  Sprinkle with sea salt to taste. 

Bake at 350 degrees for 30 minutes or until browning starts.
